Roast Beef With Pumpkin and Galeos Miso Caesar

  • 6 LBS OF BONELESS RIB EYE BEEF
  • FRESH ROSEMARY
  • 1 TBSP OF COURSE BLACK PEPPER
  • 10 CLOVES OF WHOLE GARLIC PEELED
  • 2 LBS OF PUMPKIN DICED INTO 2" SQUARES
  • 3 TBSP OF OLIVE OIL
  • 1 TBSP OF SEA SALT
  • 1/2 CUP OF GALEOS MISO CAESAR

Preparation

Preheat oven to 350 degrees. Place roast on cutting board and make small but deep cuts with a knife. Insert the garlic cloves and rosemary in the cuts. Place the roast in a roasting pan and rub with olive oil, salt and pepper. Add the pumpkin squares to the pan. Pour Galeos Miso Caesar over the beef and pumpkin. Use a brush to spread evenly. Roast for 45 minutes and then brush or baste roast and pumpkin with dressing. Roast for an additional 45 minutes until inside temperature of the roast reaches 135 degrees for medium rare. Remove roast from oven and let rest for 10-15 minutes before carving. Serve... and enjoy just like that!
